Raise your hand if you’ve heard of Dutch Crunch Bread. Sometimes referred to as Tiger’s Tail bread, this combination of sweet, savory, crunchy bread, though delicious, is not well known among people.
I remember the first time I tried this amazing bread. One of the local sandwich shops had just started carrying it as an option in their deli. Not really sure what it was, I was overwhelmed with the delicious taste and texture! Sweet, light and fluffy white bread with this incredible, mouth-watering crunchy top. I knew that this was something special. And the look? This amazing pattern of crunch-tastic color and topping completely blew my mind!
Taste, texture, and appearance? This bread literally has everything going for it! That’s why I had to come up with an amazing recipe for you, our Honeyville fans. And what better way to bake this bread than in delicious, personal-sized mini loafs? There’s nothing cooler than handing out an individual-sized loaf of Dutch Crunch Bread. Your family and friends will think you’re a master bread maker for sure! Okay, enough talk, let’s get to baking some Dutch Crunch Mini Loaves!
Ingredients:
3 cups Hot Water
1/4 cup Butter, melted
1 Egg
1/3 cup Sugar
1 Tbsp Salt
8-10 cups Honeyville Alta Artisan Bread Flour
3 Tbsp SAF Yeast
Crunch Topping:
1 cup Warm Water
2 Tbsp Sugar
2 Tbsp Vegetable Oil
1/2 tsp Salt
1 1/2 cups Honeyville Fine Rice Flour
2 Tbsp SAF Yeast
Yields: 6-8 Mini Loaves
Directions:
First, make your dough.
To do so, combined ingredients into your BOSCH Universal Mixer in the following order: water, butter, egg, sugar, salt, 4 cups flour, yeast. Turn mixer to #2 setting and once ingredients are mixed, add remaining flour 1 cup at a time until dough begins to pull away from the sides. Knead in machine for 3-4 minutes.
Remove dough and place in a oiled bowl, cover, and let rise for 30 minutes.
Once dough has risen, uncover and punch down.
Remove dough from bowl and using your Wüsthof Bench Scraper, cut dough in little balls. Each dough ball should weight about 10 oz.
Shape each dough ball into a loaf, then place in your USA Pan Mini Loaf pans.
Once each loaf is shaped and in a pan, preheat your oven to 400 degrees and begin your topping.
To make topping, combine water, sugar, vegetable oil, salt, fine rice flour, and yeast in a large bowl and whisk ingredients together.
Once dough loaves have doubled in size, spoon on topping. Give each loaf a good coating, as the more topping you add, the better looking the crunch top is.
Place in preheated oven of 400 degrees, knock temperature down to 350, and bake for 25-30 minutes. Remove and allow to cool on a wire rack before serving.
