For most of us, what we have at breakfast time greatly affects the things we do for the rest of the day. Yet, we all seem to find ourselves in a constant food battle of what we know we should eat, and what we want to eat.

What if I said you can have both healthy and tasty? No, I don’t mean increasing the size of your breakfast dish. I’m talking about having a healthy, delicious breakfast meal that satisfies your sweet tooth and leaves you feeling good inside. Oh, did I also mention it’s completely grain-free? Trust us, these aren’t the healthy muffins your mom used to make! Get ready for our Coconut Flour Orange Poppy Seed Muffins!

Ingredients:
1/4 cup Honeyville Flax Seed, milled
1/4 cup Honeyville Organic Coconut Flour
1/4 cup Honeyville Tapioca Starch
1 tsp Baking Soda
2 tsp Cream of Tartar
2 Tbsp Honeyville Poppy Seeds
1/4 tsp Salt
4 Eggs
1/4 cup Raw Honey
2 Tbsp Coconut Oil, melted
1/2 cup Orange Juice

Yields: 8 muffins

Directions:
Preheat oven to 375 degrees.

Mill your flax seed in a small mill or coffee grinder and place it in a large bowl (should give you about 1/2 cup flax seed meal). Add coconut flour, tapioca starch, baking soda, cream of tartar, poppy seeds, and salt, and whisk together until full combined.

In a separate bowl, combine eggs, honey, coconut oil, and orange juice, and whisk together until full combined.

Add wet ingredients to dry ingredients and mix together until a wet, thin batter forms.

In your USA Pan Muffin Pan, lined with muffin cups, pour batter. Fill cups about 3/4 way full.

Bake at 375 for 25 minutes, or until tops are golden brown and toothpicks come out clean. Let cool on a wire rack before serving.
