It’s time for gluten-free baking perfection! It’s time to create some Coconut Flour Lemon Blueberry Bars!
3/4 cup Honeyville Organic Coconut Flour
1/2 cup Tapioca Starch
1/2 cup Organic Coconut Palm Sugar
1 Tbsp Baking Powder
1/4 tsp Himalayan Salt
1/2 cup Butter, softened
2 Tbsp Lemon Juice
3/4 cup Applesauce
1/2 cup Honeyville Freeze Dried Blueberries
Preheat oven to 350 degrees.
In a large bowl, combined coconut flour, tapioca starch, coconut sugar, baking powder, and salt, and whisk together until combined.
Next, add butter, lemon juice, and apple sauce, and mix until a thick batter forms.
Re-constitute your blueberries by soaking in water until soft, then draining any excess liquid. Gently fold into your batter.
In your USA Pan Square Cake Pan, lined with parchment paper, pour batter and press evenly throughout pan.
Bake at 350 degrees for 43-45 minutes, or until top is a gold brown. Remove and let cool in pan for 15 minutes, then lift up and out, using the parchment paper, slice into bars, and serve.
