Cookies, cookies I do see. Cookies, cookies 1, 2, 3. Let’s have cookies for you and me! Okay, I know, that sounds a bit like a cheesy nursery rhyme. But whenever I find a fun, delicious new cookie recipe, I get really, REALLY excited! So you can imagine how excited I am for today’s recipe.
With the New Year here, many of us are looking for a healthy alternative to the snacks we have come to love so much in our lives. This is one of those snacks! Not only is it completely grain, gluten, egg, and nut free, it’s low in sugar, and, if prepared without chocolate chips, could qualify as a dairy-free snack as well. Oh, and it tastes so, so good! Let’s get to it, shall we? Grab your favorite mixing spoon, it’s time for some Coconut Flour Chocolate Chip Cookies!
Ingredients:
1/3 cup Honeyville Organic Coconut Flour
1/4 cup Organic Coconut Oil
1/4 cup Maple Syrup
1 tsp Vanilla
Pinch of Salt
1 Tbsp Ultra Gel
3 Tbsp Water
1/4 cup Chocolate Chips
Yields: 9 cookies
Directions:
Preheat oven to 350 degrees.
In a large mixing bowl, mix together flour, coconut oil, syrup, vanilla, and salt. Next, add the ultra gel and water and mix until a thick dough forms.
Once dough is formed, delicately fold in chocolate chips until fully combined.
On your USA Pan Cookie Sheet, lined with parchment paper, take about a Tbsp sized ball of dough and shape like a cookie, then lay on sheet (cookies will not spread much when baked).
Bake at 350 degrees for 12-14 minutes, or until outsides turn a slight golden brown. Remove and allow to cool on baking sheet before serving.
