Don’t you just love Banana Bread? It makes you feel like a kid again. I have so many memories of walking into my childhood house after school and smelling that warm, comforting aroma hitting my nose like a freight train of banana goodness! To this day, nothing soothes my soul better than a slice of banana bread with melted butter.
Imagine if you could have those same memories, but with a gluten free loaf. Well, now you can with this delicious recipe made with our Organic Coconut Flour and Freeze Dried Bananas. Give it a try and I promise you, those same childhood memories of mom’s famous Banana Bread will come rushing back!
Ingredients:
1 cup Honeyville Organic Coconut Flour
2 cups Honeyville Freeze Dried Bananas
4 Eggs
1/2 cup of Melted Butter (1 cube)
5 Tbsps Honey
1/4 tsp Salt
1 tsp Chef Tess Wise Woman of the East Spice
1/2 tsp Baking Soda
1 Tbsp Vanilla
Directions:
Preheat oven to 300 degrees. Rehydrate Freeze Dried Bananas.
Here’s a rehydrating tip: Measure out the amount of Banana’s you’ll need, soak them in a separate bowl, then drain the excess water.
Line the bread pan with parchment paper. This loaf can be very sticky, so lining your pan with parchment paper helps the bread from sticking to the pan.
In a mixing bowl, combine Banana’s, Honey, Butter, Vanilla, and eggs and mix until well combined.
In a separate bowl, mix Coconut Flour, Baking Soda, Salt, and Wise Woman of the East Spice. (tip: if you have a sifter, sift these items together for better results).
Add dry ingredients with wet ingredients and mix together. The batter will have a texture similar to cookie dough.
Add batter to bread pan. This recipe will make one loaf.
Bake for 1 hour 15 minutes at 300 degrees.
Remove, and let cool for 10 minutes. Lift on parchment paper to remove loaf, then slice and serve.
This recipe bakes up a texture similar to typical Banana Bread, but the Organic Coconut Flour gives the loaf a tropical and delightful taste. Make sure to top with butter or even honey for a sweeter taste. What surprised me the most was how easy this recipe was to make with the Freeze Dried Banana’s. Once rehydrated, they were the perfect consistency for Banana Bread. And it’s gluten free! You can’t beat that.
