We all know we could and should eat healthier, but with the hustle and bustle of our daily lives, sometimes that can be very difficult. We need delicious, easy to prepare meals and treats to help us get through the day without spending all of it in the kitchen! Today’s recipe is just that!
Using our Coconut Flour and Freeze Dried Bananas, along with a few other favorite ingredients, we’ve created the perfect grab-and-go treat to give you that energy boost you need to get through the day. Oh, and it taste simply amazing! Let’s make some Coconut Banana Balls!
Ingredients:
1 1/2 cups Honeyville Freeze Dried Bananas
2 Eggs, whisked
1 tsp Baking Powder
1/4 cup Coconut Flakes
1/4 cup Honeyville Organic Coconut Flour
1/4 cup Walnuts
2 Tbsp Honeyville Sunflower Seeds
1 tsp Vanilla
2 Tbsp Raw Honey
1/4 tsp Salt
Pinch of Cinnamon
Yields: 12 balls.
Directions:
Preheat oven to 350 degrees.
Re-hydrate your bananas by soaking in water in a medium bowl until they are super soft, then drain any excess liquid.
In a large, separate bowl, combine eggs, baking powder, coconut flakes, coconut flour, walnuts, sunflower seeds, vanilla, honey, salt, and cinnamon. Add bananas and mix together.
Make sure the bananas are soft enough to mush in the batter.
Next, take dough and using a spoon, drop about 1 Tbsp of dough ball on your USA Pan Cookie Sheet covered with parchment paper.
Bake at 350 degrees for 15-20 minutes. Remove and allow to cool and set up for 20 minutes after. Don’t worry if balls seems extremely soft and spongy. They’re suppose to feel that way.
These balls bake up with a delicious aroma and taste you simply have to try. The rich taste of coconut, combined with the amazing taste of bananas, give this treat the perfect blend of tropical flavor. The texture is soft, sponge-like, and absolutely amazing. The walnuts and sunflower seeds also give an added measure of texture and taste you weren’t expecting.
