Rice is so versatile. You can make it creamy, sweet, savory, spicy, etc. It’s the perfect side dish! I found this recipe on The Girl Who Ate Everything. We’ve made this several times since I first found it-we love it!
Ingredients:
1 and 1/4 cup Honeyville Long Grain White Rice
2 Tbsp Butter
2 and 1/4 cups Chicken Broth (I made my own using Water and Shirley J’s Chicken Bouillon which is available at the retail stores)
Juice and Zest of 2 small limes (about 1/4 cup juice)
2 Tbsp chopped Cilantro
3/4 tsp Salt
1/4 tsp Cumin
Pepper to taste
Directions:
Melt butter in a saucepan. Saute rice in butter for a minute or so.
Add chicken broth, lime zest and juice, cilantro and spices. Bring to a boil, cover, and reduce heat to low.
Continue cooking for 20 minutes or until rice is done. Fluff with a fork.
You can serve this with some grilled chicken or I like to use it with Tenille’s Mexican Haystacks Recipe. Super delicious!
