Imagine, if you will, taking all that delicious, calming flavor and texture of your favorite donut and baking it up into a warm, mouth-watering muffin, with one simple twist. What’s that twist, you ask? Zucchini. Yes, you heard me right, zucchini!
With the help of our Freeze Dried Zucchini and our impressive Alta Artisan Bread Flour, we’ve baked up the ultimate, mouth-watering, nerve calming treat that is sure to lighten your step and make each day just a little bit better. Grab an apron and your favorite mixing spoon, it’s time to bake up some Chocolate Zucchini Donut Muffins!
1 1/4 cup Sugar, divided
1/3 cup Coconut Oil, melted
1/4 cup Applesauce
7 Tbsp Milk
1 tsp Baking Soda
4 Tbsp Honeyville Baker’s Cocoa
1/2 tsp Himalayan Salt
1 1/2 tsp Cinnamon, divided
1/2 cup Butter, melted
Yields: 12 muffins
Preheat oven to 350 degrees.
In a large bowl, combine 3/4 cup Sugar, coconut oil, and applesauce, and mix together. Add eggs and milk and stir in.
Next, add baking soda, cocoa powder, salt, 1 tsp of cinnamon, and flour. Stir together until a thin batter forms.
Place your freeze dried zucchini in a resealable sandwich bag and smash into smaller pieces with a rolling pin. Add zucchini to batter and mix accordingly.
Prepare your USA Pan Muffin Pan by spraying with cooking spray. Using a spoon, scoop batter into each cup.
Bake at 350 degrees for 12 minutes. Remove and let cool in the pan for 5 minutes before turning out.
While muffins are cooling, whisk remaining cinnamon and sugar together in a medium bowl, and place melted butter in another bowl, Gently dip each muffin in the butter completely, then roll it in the cinnamon/sugar mixture, and allow to set up on a wire rack. Serve and enjoy!
