Chocolate Walnut Mini Cake

Cake. This one simple word can invoke pure satisfaction or complete guilt into the hearts of many. Whether searching for an excuse for another slice or doing everything we can to completely avoid it, we can all agree, cake is something we absolutely love.

But why hide from it? Why can’t we embrace the dessert we love most? Why do we let our fear of a few extra calories keep us from pure and complete joy? Is there no other solution? To use a popular phrase, can’t we have our cake, and eat it too?

I’m here to tell you yes we can! Using our all new, Gluten-Free Walnut Flour, we’ve created a delicious, personal-sized treat that gives you all the taste and aroma you’ve come to love in cake, with a few less calories to worry about. Grab your fork, let’s have some Chocolate Walnut Mini Cakes!

Ingredients:
3 cups Honeyville Walnut Flour
1/2 cup Sugar
1/4 cup Brown Sugar
2 tsp Honeyville Baker’s Cocoa Powder
7 Eggs, separated
3/4 tsp Cream of Tarter

Frosting:
1/2 cup Heavy Cream
1 Tbsp Powdered Sugar
2 tsp Honeyville Baker’s Cocoa Powder

Directions:
Preheat oven to 350 degrees.

Eggs and Sugar

In a large bowl, combine egg yolks and sugar. Beat together until you get a light yellow color.

Walnut Flour

Add flour, baker’s cocoa, and brown sugar, and fold in until a thick batter forms.

Egg Whites

In a separate bowl, whisk egg whites with cream of tarter until soft peaks begin to form.

Whipped Eggs and Batter

Slowly fold egg whites into walnut batter 1/3 at a time, until you have a soft, smooth batter.

Greased Ramekins

Prepare 3-5 ramekins by spraying each with non-stick cooking spray.

Cake Batter

Slowly add batter to each ramekin, making sure not to fill to the top, as these cakes will bake up nice and fluffy.

Place in oven and bake at 350 degrees for 30-35 minutes.

Frosting

While cakes are baking, make frosting by combining cream, powdered sugar, and baker’s cocoa and mixing with an electric mixer until soft peaks form.

Baked Cakes

Remove cakes and allow to cool before gently removing them from the ramekins. spread frosting over the top, then serve.
