Calling all Quinoa lovers! And if you still haven’t tried Quinoa- you are missing out because it is wonderful! So here is a yummy dessert that I think you will love. Don’t think of it as a “cookie” because then you will go into this with a wrong impression. Think of it as simply a snack or something sweet after a meal. Test this out and then let me know what you think. I really enjoyed them and I liked them more and more with each one that I had. 
2 cups cooked Honeyville Quinoa
1 cup Honeyville Powdered Peanut Butter + 1/3 cup water
1/4 cup Honey
1/4 cup Honeyville Flax Seed (Ground)
1/2 tsp. Salt
1/2 cup Chocolate Chips (or more if desired)
Preheat oven to 350 degrees. Mix together peanut butter and water in a large bowl. Add all ingredients and mix well. Drop by tablespoons onto a greased baking sheet and bake 18-20 minutes. When you remove them from the oven, take a spatula and press down on them to form a cookie shape.

Spoon them on the cookie sheet.
 When they come out of the oven, press down with a spatula to form more of a cookie shape than a ball.
(Tip- if you don’t want the chocolate chips to melt use cooled quinoa- if you don’t care, like me, then use the quinoa at whatever temperature you want)
