It’s been a while since I have made and posted an actual meal! It’s also been a while since I even cooked a meal for my family! It feels good to be getting back into the swing of life and back on a schedule. I love “winter” meals! I love getting to eat something warm while I know it’s chilly outside, then to curl up in a blanket and enjoy the heater and warmth of a house. Hope you are enjoying some “wintery meals” and maybe this one will make the menu this week.
1/4 cup Honeyville Freeze Dried Onion
1 cup Honeyville Tomato Powder + 2 cups water
2 cups Honeyville Freeze Dried Corn
2-14.5 oz. Diced Tomatoes
1 Tbsp. Taco Seasoning
1 Tbsp. Cumin
1 Tbsp. Chili Powder
Directions:
Put black beans, red beans, and chicken in a pot, fill with water and bring to a boil. Turn off heat and cover for about 15 minutes. Add onion and corn and cover for about 5 more minutes. Drain. While re-hydrating beans and chicken, mix tomato powder and water in a separate bowl. Add to pot: diced tomatoes, taco seasoning, cumin, chili powder, and tomato powder mix. Stir well and heat until ready to serve. Add more water if desired. Enjoy it in a bowl or on top of rice, top with sour cream, cheese or cilantro.
