I love cereal! I frequently eat it for breakfast, I’d eat it for lunch, I’ve had it for dinner, and I’ve been known to enjoy a bowl after the kids go to bed! Thankfully not all on the same day but really I do love to eat cereal. This recipe is great because it takes a healthy cereal and combines a few other ingredients and creates a new flavor profile. Ingredients:
1 and 1/2 cups prepared Honeyville Powdered Peanut Butter
1/3 cup packed Brown Sugar
1/3 cup Honey
1/2 tsp Cinnamon
5 and 1/2 cups Bran-Flake Cereal
1 and 1/2 cups Dried Cranberries, divided
Directions:
Prep a 9×9 pan by lining it with foil. Set aside.
Next in a large sauce pan stir together the brown sugar and honey. Bring it to a boil, stirring constantly.
Remove from heat. Working quickly stir in the peanut butter, cinnamon, cereal, and 1/2 cup of dried cranberries. Stir until everything is well coated.
Press mixture firmly into foil-lined pan. Press the remaining dried cranberries on top. Cover and chill until bars are set or up to 24 hours.
To serve, lift the foil from the pan and cut into squares.
Make these the night before and you have a quick breakfast all ready for you on your way out the door or have them for an afternoon snack. My family and I thought they were great! I think it’d be easy to switch up the type of cereal used as well (ie Shredded Wheat, Chex (for a gluten-free option), or even try Zak’s Homemade Corn Flakes).
