Using our amazing and super tasty Dehydrated Shoestring Carrots, we’ve created a delicious, light, fluffy, dessert that incorporates everything you love about carrot cake. There is just one big difference. This isn’t a cake at all, it’s a cookie. That’s right, a warm, mouth-watering cookie! Don’t let your taste buds deceive you. They may think they’re tasting a light, fluffy carrot cake, but trust us, this is all cookie! Grab a mixing spoon, it’s time for Carrot Cake Oatmeal Cookies!
1 cup Honeyville Regular Rolled Oats
3/4 cup Honeyville Alta Artisan Flour
1 1/2 tsp Baking Powder
1 1/2 tsp Cinnamon
Pinch of Salt
2 Tbsp Coconut Oil, melted
2 Tbsp Honeyville Ova Easy Egg Crystals + 3 Tbsp Water (or 1 Egg)
1 tsp Vanilla
1/2 cup Pure Maple Syrup
1/2 cup Honeyville Dehydrated Shoestring Carrots
Yields: 12 cookies
Preheat oven to 325 degrees.
In a large bowl, combined oats, flour, baking powder, cinnamon, and salt, and whisk together.
In a separate bowl combine melted coconut oil, egg crystals and water, vanilla, and maple syrup, and whisk together until completely combined.
Re-hydrate carrots by soaking in water until soft, then draining any excess liquid.
Add wet ingredients to dry ingredients and mix until a thick batter forms. Gently fold in carrots.
Chill dough for 30 minutes in the refrigerator, then remove and scoop out Tablespoon sized dough balls onto your USA Pan Cookie Sheet, covered with parchment paper.
Bake at 325 degrees for 12-15 minutes. Remove and allow to cool before eating.
