Recognized by their small seed pods, cardamom is actually the world third most expensive spice! Yes, as you scan your local grocery store spice rack, you’ll see it’s just a bit pricey, but packed full of so much taste and aroma, this spice is definitely one you want in your collection. Combined with the right grain, and this spice produces a taste you simply can’t pass up!

That’s right, this delicious, whole grain super food, when ground and added to this unique spice, gives you a taste, texture, look, and smell, that you simply can’t pass up. Still unsure? Ingredients:
1 1/2 cups Hot Water
1/4 cup Olive Oil
1/4 cup Raw Honey
2 tsp Salt
1 Tbsp Cardamom
2/3 cup Honeyville Whole Grain Rye, milled
2 Tbsp SAF Yeast
3 cups Honeyville Alta Artisan Bread Flour
Yields: 1 round loaf
Directions:
First, mill your Rye.
Pour 2/3 cup rye into your Komo Classic Stone Mill or Nutrimill Grain Mill and mill into a fine flour.
Next, in your BOSCH Universal Mixer, add the following ingredients in this order: water, oil, honey, salt, cardamom, rye flour, yeast. Turn mill to #2 setting and, while ingredients are mixing, slowly add alta artisan flour 1 cup at a time. Once dough begins to pull away from the sided, knead in machine for an additional 3-4 minutes.
Remove dough from machine, shape into a round ball, and place in a greased bowl.
Cover and let rise for 30-40 minutes, or until dough is double in size.
Preheat oven to 400 degrees.
Punch down dough, remove, and shape into a round ball. Place on your USA Pan Cookie Sheet, lined with parchment paper, and let rise for another 20-30 minutes. Once rise, slice three lines in the top of the ball, brush with melted butter.
Place in 400 degree oven, knock temperature down to 350 degrees, and bake for 35-40 minutes. Remove, and transfer to wire rack to cool. Once cooled, slice and serve.
