What do you love most about Autumn? Is it the crisp leaves, cool air, and changing colors? Is it the sweet smells, delicious treats, and spooky evenings? Or, is it the exciting traditions that begin in late September and seem to carry all the way through December?
For my little family, one of those fall-time traditions is a visit to the local apple orchard. The amazing aroma of fresh picked apples, blended with the delicious smells of baked apple pie, streusel, and pastries, always gets us in that autumn mood! But by far the thing we love most are the caramel-dipped apples that seem to only come around this time of year. Delicious, smooth caramel resting atop a crisp, green apple really is the perfect fall treat!
It’s that love of these childhood treats that led me to today’s recipe. Not only do you have everything you love about caramel apples, you’ve got the sweet taste and aroma of fresh baked cookies thrown into the batch. And we all know how important homemade cookies are this time of year! So grab your favorite scarf and warm sweater, it’s time to bake up some Caramel Apple Cookies!
1 cup Honeyville Alta Artisan Flour
3/4 tsp Baking Powder
3/4 tsp Ultra Gel
1/8 tsp Salt
2 Tbsp Butter, melted
1 1/2 tsp Vanilla
1/2 cup Brown Sugar
2 Tbsp Honeyville Freeze Dried Apples
4 Caramel Squares, diced
Yields: 12 cookies
Preheat oven to 350 degrees.
In a medium bowl, whisk together flour, baking powder, ultra gel, and salt.
In a separate bowl, whisk together butter, egg, and vanilla. Stir in brown sugar until smooth.
Add dry ingredients to wet ingredients and mix until a thick dough forms.
Using your Wüsthof Classic Paring Knife, dice caramel squares into smaller pieces.
Fold half the caramel squares and 1 Tbsp of the apples into the cookie dough. Make sure you do not re-hydrate the apples before adding them.
Scoop out ping pong shape dough balls and place on a baking sheet lined with parchment paper.
Lightly press down dough ball, then add remaining caramels and apples to each cookie, gently pressing both into the dough.
Bake at 350 degrees for 10 minutes. Remove and allow to cool on cookie rack for 10 minutes before serving.
