I love all the Holiday candies that only come out this time of year. To me, the best would have to be the candy cane. Everything about it symbolizes what we love most during the Holidays. The striped red and white colors. The peppermint taste. The hard candy texture. This is what it’s all about.

My little family has adopted a tradition every Holiday season of stopping by the local candy store to watch them make these sweet treats by hand. We gaze in amazement as the candy shop owner boils, melts, flavors, pulls, twists, and rolls the sweet concoction until you’ve got the perfectly hooked, sweet tasting candy canes that we all love.

Perhaps it was our yearly visit to this shop that got me in the candy cane mood, but I just knew that for today’s treat, I had to come up with something that uses everything we love about the candy cane. I got some extra help from our amazing Honeyville Insta-Whip, Honeyville Chocolate Cake mix, and candy cane flavored creamer, which you can pick up at any local grocery store. So, with candy canes in our hearts, let’s get to baking our Candy Cane Cake!

Ingredients (Cake):
2 cups Chocolate Cake Mix
6 Tbsp Honeyville Ova Easy Egg Crystals (3 eggs)
1/4 cup Candy Cane Coffee Creamer
1/4 cup Water

1 cup Honeyville Insta-Whip
1 tsp Powdered Sugar
1 tsp Ultra Gel
1/2 cup Candy Cane Coffee Creamer
1/2 cup Water
1/4 cup Heavy Cream
1 cup crushed Candy Cane

Preheat oven to 350 degrees.

In a large mixing bowl, combined cake mix, egg crystals, creamer, and water. Mix together until a soft batter forms.

Pour batter in a greased circled cake pan. Bake in oven at 350 degrees for 20-25 minutes, or until toothpick comes out quickly.

Remove and allow to cool 10 minutes in the pan, then gently remove the pan and allow to cool on a cooling rack for 45 minutes.

While cake is cooling, combine insta-whip, powdered sugar, ultra gel, creamer, water, and heavy cream, and mix with an electric hand mixer on high until stiff peaks begin to form.

Spread frosting on top and sides, then sprinkle crushed candy canes on top. Slice and serve.

The first thing you’ll notice about this cake is how light and fluffy the texture is. Thanks to the creamer, you get a very fluffy cake, with an amazing peppermint taste. The insta-whip comes through again, creating a delicious, frosted topping that is both fluffy and creamy, while hitting you with that cool peppermint taste you’ve been asking for.
