Campfire Scrambled Eggs

Summer and camping. No two things seem to fit better! Whether it’s family backpacking trips, Boy Scout camp adventures, or simple overnight fishing trips, we can all agree that summertime is, well, camping time!

If there is anything I love more than camping, it would have to be campfire food! Whether it’s roasting marshmallows, baking up warm tin foil dinners, or even just grilling a thick steak over an open flame, there’s something about that smokey taste, combined with the outdoors, that makes everything right in the world. Prepare that food in a Dutch Oven or Cast Iron Skillet, and, well, you’ve got a meal that rivals even the finest four star tasting cuisine.

Today’s recipe is everything you love in campfire food! Using our versatile Ova Easy Egg Crystals, combined with our Freeze Dried Ham, Bell Peppers, Corn, and Onions, then topped with our delicious, smokey tasting Bacon TVP, we’ve cooked up a tent-side breakfast that will wake up even the sleepiest lumberjack! Grab your cast iron skillet, it’s time to make some Campfire Scrambled Eggs!
Ingredients:
3/4 cup Honeyville Ova Easy Egg Crystals + 1 cup Water
2 Tbsp Butter
Directions:
First, prepare your eggs.

Egg Crystals

To do this, add egg crystals and water to a large bowl and whisk until completely combined.

Re-hydrated Ham

Re-hydrate your ham, corn, onion, and bell peppers, by soaking them separately in bowls until soft, then draining any excess liquid.

Campfire Eggs Ingredients

Add corn, onions, bell peppers, ham, and TVP to eggs and mix evenly.

Melted Butter in Skillet

Prepare your skillet by melting butter over medium heat.

Eggs Scrambling in Skillet

Add egg mixture and stir until scrambled eggs begin to form.

Bell Peppers in Eggs

Once eggs begin to scramble, add bell peppers and onions, and continue mixing until eggs are completely cooked.

Serve warm.
