Barley, Comet Rice, and Oat Flour

Ingredients:
1 cup Honeyville Oat Flour
1/2 cup Honeyville Barley Flour
1/2 cup Honeyville Comet Rice Flour
2 Tbsp Raw Organic Chia Seeds (Ground)
2 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Salt
3 Tbsp Honeyville Buttermilk Powder + 1 cup Water
1/2 cup Water
2 tsp Vanilla
1/3 cup Raw Honey
2 cups Greek Yogurt

Yields: 4-5 Muffins in a Jar

Directions:
Preheat oven to 350 degrees.

Dry Ingredients

In a large bowl, combine oat flour, barley flour, rice flour, ground chia seeds, baking powder, baking soda, cinnamon, and salt, and mix together until fully combined.

Wet Ingredients

In a medium bowl, whisk together reconstituted buttermilk, water, vanilla, and honey.

Muffin Batter

Pour wet ingredients into dry ingredients and stir until a thick batter forms. Let sit for 15-20 minutes.

Batter in Jar

Pour batter into individual jars. Only fill jars about half-way, as these muffins will fluff up during bake time.

Baked Muffins

Place in oven and bake at 350 degrees for 20-25 minutes. Remove and allow to cool for 10-15 minutes.

Yogurt Topping

While muffins are cooling, whisk your yogurt with an electric hand mixer, just to make it light, airy, and fluffy.

Place a dollop on top of the muffin, they top with your favorite freeze dried fruit.
