So remember when I posted about Blender Wheat Pancakes? Well I got an idea from Chef Tess and thought I would give it a shot in my recipe. And it has moved to #1 in my house this week! It is so flavorable, delicious, and filling! I can easily eat 5-6 Blender Pancakes or 6-7 (shhhhh!!!) Honeyville  Pancakes (those are hmmmmm…mmmm…good too!!!), but these pancakes, I eat 3 and try to squeeze down 4 cause they are so good. They really are filling!


So here is the original recipe:
1 cup Honeyville wheat kernels, washed*
1 1/4 cup milk
1 egg
1/3 c vegetable oil (you can substitute 1/3 cup of Applesauce-I use the applesauce)
1 Tbsp. baking powder
1/2 tsp. salt
1 1/2 Tbsp. sugar (if desired)
Wash wheat and drain. Place in blender with milk and blend on highest speed for 5 minutes. Add rest of ingredients and blend 1-2 minutes longer. Make your pancakes.

Here it is “Food-Storage-ized:”
1 cup of Honeyville Wheat Kernels, washed

3 Tbsp. + 2 1/4 tsp. of Honeyville Powdered Milk + 1 1/4 cup water
2 Tbsp. of Honeyville Powdered Eggs + 4 Tbsp. of water
1/3 cup of vegetable oil (you can substitute 1/3 cup of Applesauce-I use the applesauce)
1 Tbsp. baking powder
1/2 tsp. of salt
1 1/2 Tbsp. of sugar or Honeyville Granulated Honey (optional)
PLUS:
1 Tbsp. cinnamon
Re-hydrate Zucchini. Wash wheat and drain. Place wheat in blender with milk and blend on highest speed for 5 minutes.  Add rest of ingredients and blend 1-2 minutes longer. Make your pancakes.

* Wheat Tip: DO NOT SKIP this step!!!! Washing your wheat is SUPER important!!! As we have mentioned before, wheat LOVES water and will soak it up! So, I might have, one time, skipped this step because of laziness and might have almost burned my blender out because the wheat soaked up all the liquid so fast that the mixture was too thick it couldn’t blend anymore. PLEASE learn from my mistakes and DO NOT skip washing the wheat. In fact, I put my wheat in a bowl and just let it soak while I am gathering the other ingredients, then I rinse it. (Also, I have used both Hard Red and White Wheat for this recipe)

Give these pancakes a shot! You’ll get your kiddos to have some veggies and they don’t even know it! They really are scrumptious!
