This is another family favorite recipe! We’ve been making and chowing down this recipe for years. We call it “Corn Salsa” for short. My family enjoys watching college football and this will always make an appearance on game day or family BBQ. It’s easy to throw together and makes a bunch–perfect for crowds!
Ingredients:
2 cups Honeyville Freeze Dried Corn
1 and 1/2 cups (already cooked and drained) Honeyville Black Beans
2 cups (already cooked and drained) Honeyville Kidney Beans
1/2 cup Honeyville Freeze Dried Bell Peppers
2 Tbsp Honeyville Dehydrated Green Onions
3-4 medium sized Tomatoes (I used 4 Roma’s), chopped
1/2 cup Zesty Italian Dressing
Directions:
Rehydrate corn, green onions, and bell peppers according to package instructions and drain well. In a bowl add all ingredients together and toss to coat everything with the dressing. Add more dressing if necessary. Serve with tortilla chips and refrigerate any leftovers.
Now I will even admit that I was snacking on this while I waited for the rest of our dinner to cook. I couldn’t wait! Trust me your tortilla chips will thank you when you make this.
