I’m always on the hunt for a great meatless meal. And have I found a winner-winner-no-chicken-in-this-dinner! Now granted these egg rolls could be used as a party snack or appetizer depending on how big you made them too. Dual purpose–I like that! I’ve adapted the original recipe found here. This meal got 2 thumbs way up from my family, and I hope your friends and family enjoy it just as much!
Ingredients:
2 cups Honeyville Freeze Dried Corn, rehydrated
1 and 1/2 cups (prepared) Honeyville Black Beans or Honeyville Quick Cook Beans, rinsed and drained
1 cup Honeyville Freeze Dried Bell Peppers
2 cups Honeyville Freeze Dried Cheddar Cheese, rehydrated
1/4 cup Honeyville Dehydrated Onions, rehydrated
1 Tbs Chef Tess Southwest Fajita Seasoning Blend
1 (4 oz) can Diced Green Chilies
1 large Roma Tomato, chopped
1/4 cup chopped Cilantro
Juice of 1 Lime
1 package (21 wraps) egg roll wrappers
olive oil for brushing
Directions:
In a large bowl add all the ingredients except the egg roll wrappers and olive oil. Gently stir to mix everything together.
Begin filling the egg rolls using 1/4 cup filling mixture for each wrap. Place filling in the middle.
Fold the bottom corner completely over the filling. Using your finger, moisten the 2 top edges shown below (dark line added for help-thankfully I don’t have black tap water!).
Next fold the two sides in toward the center, so it’s like an envelope.
Continue rolling egg roll up and place seam side down on a greased cookie sheet. Repeat with remaining egg rolls.
Lightly brush the tops with olive oil.
Bake 425 degree preheated oven for about 15 minutes (until golden brown and turning crispy), turning over halfway during cooking time. When finished baking transfer to a plate to cool slightly. Serve with salsa, avocados, sour cream, etc. Makes about 21 egg rolls.
I loved this dish! My 3 year old told me it was really yummy, so that was a big win right there. I had multiple people tell me that they were full but they were going to eat just one more because they were so good. I think you could easily adjust the ingredients to suit your family’s preference (next time I might add some more beans). This is a great option for a meatless meal or for a game day snack.
