Healthy or sweet? That seems to be the only two choices whenever snack time comes around. Every day we find ourselves making that difficult decision. Do we pick something to satisfy our sweet tooth, or go with the snack that is better for us? Why must we always have this battle? Why can’t we have a treat that’s both healthy and extremely satisfying?

I’m here to tell you we can! For today’s recipe, we picked the tried-and-true contender for any snack time, the cookie, and put a little Honeyville twist on it. What twist you ask? How about baking it up without any added sugar or eggs? Sounds pretty healthy, right? Not to worry, it’s also super delicious as well. Best of all, it’s quick and simple to bake. At this point, is there any reason not to bake these up? Yeah, we didn’t think so! Grab your apron, it’s time for Apricot Coconut Oatmeal Cookies!

1 1/2 cups Honeyville Regular Rolled Oats
1 cup Coconut Flakes
1/2 tsp Salt
1 tsp Cinnamon
1/2 tsp Allspice
1/4 cup Honeyville Blanched Almond Flour
1/4 cup Chopped Pecans
1/4 cup Slivered Almonds
1 cup Honeyville Freeze Dried Apricots
2 cups Honeyville Freeze Dried Bananas
1/4 cup Coconut Oil
1 tsp Vanilla

Yields: 12 cookies

Preheat oven to 350 degrees.


In a large bowl, combine oats, coconut flakes, salt, cinnamon, allspice, and almond flour, pecans, and almonds and mix together.


Add apricots and mix or toss together until fully combined.


In a separate bowl, soak your bananas until soft, then drain excess liquid.


Add vanilla and coconut oil and mash together.

Add wet ingredients to dry ingredients and mix until a thick batter forms.


Using your hand, take a ball of dough and shape it into your cookie, then place on your USA Pan Cookie Sheet lined with parchment paper. Repeat process for each cookie.


Bake at 350 degrees for 20 minutes, then remove and serve!
