Apricot Chia Energy Bars

If you’re like me, summertime is all about activities! Swim lessons, family trips, outdoor activities, just to name a few. With so many things pulling us left and right (during the warmest 3 months of the year I might add) how do we have the energy to do everything?

Let me introduce you to my secret weapon for avoiding summertime exhaustion – Chia seeds! That’s right, Chia seeds! No need for caffeinated drinks or sugar-infused energy bars here. Chia seeds are natures healthy answer for an “energy boost!” That’s because Chia seeds are full of all the essentials you need to boost energy, build muscle, and provide daily fiber. Plus, Chia seeds absorb 10 times their weight in water. That helps extend hydration, and you know how important hydration is during summer!

Today we’ve created a delicious, healthy energy bar, perfect for your on-the-go summer lifestyle. Not only is it full of energy-infusing Chia seeds, we’ve also included our Quinoa, 6 Grain Cereal, ground Flax Seed, and super sweet Freeze Dried Apricots. Summer doesn’t stand a chance! Let’s get to baking Apricot Chia Energy Bars!

2 Tbsp Raw Organic Chia Seeds
1 cup Honeyville 6 Grain Rolled Cereal
1/2 cup Honeyville Organic Quinoa
1/4 cup Honeyville Flax Seed, ground
1/2 tsp Cardamom
1/2 tsp Ginger
1/4 tsp Nutmeg
Pinch of Salt
1/4 cup Olive Oil
1/4 cup Maple Syrup
1/2 cup Honeyville Freeze Dried Apricots
1/2 cup Sliced Almonds

Preheat oven to 350 degrees.

Energy Bar Ingredients

In a large bowl, combine all ingredients and stir together.

Once there are no dry spots, you’ll know your mixture is ready.

Prepare a 9×9 pan by lining it with parchment paper.

Pour mixture into pan and evenly distribute with a spoon, making sure mixture is flat and even.

Baked Energy Bars

Bake in oven at 350 degrees for 30 minutes, or until top is golden brown.

Remove, slice up, and serve.
