I love apples! Not only are they extremely healthy and full of vitamins and dietary fiber, they simply taste delicious. Now, throw a little cinnamon and sugar on them and toss them in the oven and you’ve got a delicious dessert with a taste that is out of this world! Sure, you may have added a little fat and cholesterol to that diet, but when you take that first bit, it is totally worth it!

My family and I love to take trips up to a small town here in the southern California area that is known for their large apple orchards. Every time we go we always have to have a cup of delicious apple cider and a slice of homemade apple pie. While I haven’t yet mastered the art of pressing my own apples for cider yet, I thought I’d try my hand at apple pie, with a Honeyville twist! That’s when I came up with this amazing and extremely delicious treat, Apple Pie Pockets, using Honeyville’s Freeze Dried Apples and Scone Mix. Enjoy!

Pie Filling Ingredients:
3 cups Honeyville Freeze Dried Apples
3/4 cup Brown Sugar
1/4 cup Honeyville All Purpose Flour
3/4 tsp Chef Tess Wise Woman of the East Spice

Pocket Ingredients:
3 cups Honeyville Gourmet Scone Mix
2 1/2 tsp Instant Yeast

Topping Ingredients:
1/2 cup Butter (melted)
1/2 cup White Sugar
1 tsp Chef Tess Wise Woman of the East Spice


Preheat oven to 350 degrees. In a small bowl, rehydrate the Freeze Dried Apples as explained on the can.

While apples are soaking, mix brown sugar, flour, and Wise Woman of the East Spice in a medium size bowl.

Once apples are reconstituted, drain and scoop apples into the sugar mix.

Mix until apples are completely coated, then place in refrigerator while you are making the pocket.

Dissolve 2 1/2 tsp of instant yeast in 1 cup warm water. With instant yeast, you don’t need to wait for yeast to begin to bubble. Just mix it thoroughly in water. After yeast is dissolved, add 3 cups of Honeyville Gourmet Scone Mix.

Knead with hands until dough is smooth and elastic. Once dough reaches elasticity, cover and let rest for 20 minutes. The dough will rise just a bit, but don’t worry, this is natural.

After dough has rested, remove and roll it out to a little less than 1/4″ thick. Use a sprinkle of flour to help in the rolling process.

After dough is rolled out, us a dough or pizza cutter and cut one line down the middle of the rolled out dough and 4-5 lines down the side.

You now how the dough pieces for each pocket. Take each piece and roll it out again.

Remove your pie mix from the refrigerator and scoop a spoonful of apple mix onto each strip of dough.

Take 1/2 cup of butter and melt in a bowl. Drizzle butter around dough. This will help the dough stick together when you begin to fold.

Take each side of the dough and fold over the scooped pie filling.

After dough has been folded, pinch each side of the pocket to close (you can also use a fork and press the sides closed) and place on baking tray.

Place in preheated oven at 350 degrees for 15 minutes.

After 15 minutes, remove and drizzle melted butter over the top of each pocket. Mix sugar and Wise Woman of the East spice together in a bowl and lightly sprinkle mix over each pocket.

Once each pocket has been sprinkled, place back in the oven and cook for an additional 10 minutes, or until tops turn a light golden brown.

Remove and serve. Recipe should make 8-10 pockets.

Eat with a dollop of whipped cream, a scoop of ice cream, or just with your bare hands. These delicious mini-pies are perfect for after-school meals, party snacks, or a fun new dessert for Family Night! Be careful who you make these for though, because the requests for more will surely follow!
