Apple-Pie-Cupcakes

Happy National Cupcake Day! Yes, there is such a day, and I couldn’t be happier for it! Have you noticed how cupcakes have made a huge comeback in the last few years? It seems like every time you stop by your local bakery or sweet shop, there’s an exciting, new cupcake flavor you’ve coming out.

Today’s recipe is the perfect example of that! With fall just around the corner, I decided that the best way to get into that autumn mood would be by creating a cupcake using the ideal fall-time fruit. Apples! Using our Freeze Dried Apples and our delicious Yellow White Cake mix, we’ve created the perfect cupcake for any gathering. Believe me, your taste buds will thank you! Let’s get to baking some Apple Pie Cupcakes!
Ingredients:
2 Eggs
1/3 cup Water
2 Tbsp Butter
3/4 cup Brown Sugar
1 tsp Cinnamon
1 tsp Nutmeg
1 Tbsp Ultra Gel
Cinnamon Frosting:
1 cup Butter, softened (2 sticks)
1 tsp Cinnamon
5 Tbsp Heavy Cream
Directions:
Preheat oven to 350 degrees.
Batter
In a large bowl, combine cake mix, eggs, and water, and mix until a thick batter forms.
Batter-In-Muffin-Tray
Pour batter into cupcake wrapper-lined muffin pan.
Baked-Cupcake
Bake at 350 degrees for 25 minutes, or until tops are golden brown. Remove and allow to cool.
Apple-Pie-Filling
While cupcakes are cooling, make your apple pie mix by combining re-hydrated apples, butter, brown sugar, cinnamon, nutmeg, and ultra gel in a medium bowl and mixing together.
Cut-Out-Bowl
Taking your cupcakes and your Wüsthof Paring Knife, cut a bowl in the middle of the cupcake.
Filling-Inside
Scoop a spoonful of apple pie filling into the cupcake.
Filling-Filled-Cupcakes
Repeat this process for each cupcake.
Frosting
Prepare your cinnamon frosting by combining all ingredients and mixing with an electric hand mixer until frosting is light and creamy.
Frosted-Cupcake
Using a frosting bag, pipe frosting over the top of the cupcake, just covering up the apple pie filling, then serve.

This is the ultimate cupcake for any time of year. The delicious apple pie filling, combined with the sweet taste of the yellow cake, gives this cupcake a combination of two delicious flavors that you won’t experience with any other baked treat. By far the star of this creation is the cinnamon buttercream frosting. So creamy and smooth, with the perfect amount of cinnamon goodness. You’ll find yourself licking the spoon bare before you can even spread it on the cupcake!
