I love a good mystery/thriller movie, don’t you? They always seem to follow the same story plan, with a few variations here and there. The hero is typically a normal guy, going about his everyday life, but feeling that there is more than just his basic routine. His curiosity always seems to get the best of him, and before too long, he’s thrown into a new reality that changes the plot line completely. Usually at this junction, there is a wise teacher that typically mutters a well-put phrased like “What you thought you knew about reality is completely wrong.”
What does this have to do with cookies, you ask? Let’s just say that after you try one of these delicious Baked Apple Oatmeal Cookies, what you thought you knew about oatmeal cookies will seem completely wrong.
1 1/2 cups Honeyville Quick Oats
1 cup Honeyville Freeze Dried Apples
1 package Yellow Cake Mix
1/2 cup Brown Sugar
2 tsp Ground Cinnamon
3/4 cup Applesauce
1/2 cup Raisins
Preheat Oven to 350 degrees.
In a separate measuring bowl, rehydrate Freeze Dried Apples. For recipes like this one that only call for a cup or so, I love using our smaller cans of freeze dried fruit. One small can of Freeze Dried Apples gives you the perfect amount needed for this recipe, with just a little bit left over to munch on.
In a large mixing bowl, combine Yellow Cake Mix, Quick Oats, Brown Sugar, and Cinnamon.
In a smaller bowl, mix together Egg, Appleasauce, Raisins, and rehydrated Apples.
Combine wet ingredients with dry ingredients and mix together until you get a soft cookie dough.
On a greased cookie sheet, scoop out heaping spoonfuls of dough. You’ll need two cookie sheets as this recipe will make an average of 24 cookies.
Bake at 350 degrees for 12-14 minutes or until tops are a very light golden brown. Let cool for 2 minutes, then remove and serve.
This is the best Oatmeal cookie I’ve ever tasted. The combination of Yellow Cake Mix, Brown Sugar, and Honeyville Quick Oats gives the taste and texture you won’t find in any other cookie. In addition, the added Applesauce and Freeze Dried Apples give it a great taste that will completely change what you thought about oatmeal cookies.
The question you’ll ask yourself is not if you like these cookies. It will be if you could ever go back to that old oatmeal cookie recipe.
