This recipe I decided is one of my favorites! It was super easy, but really yummy! I even thought the leftovers got better and better! I used chicken, but I would bet ground beef and beef chunks would even be tasty.

Ingredients:
2/3 cup Honeyville Quick Cook Black or Red Beans
1 1/2 cup Honeyville Freeze Dried Chicken
1/4 cup Honeyville Freeze Dried Onions
1/3 cup Honeyville Freeze Dried Corn
1/3 cup Honeyville Freeze Dried Bell Peppers
1 cup Honeyville Freeze Dried Cheese (your choice)
1 cup Salsa
1 Tbs. Olive Oil
1/4 tsp. Red Pepper Flakes
1 Garlic Clove
2 Tbs. Taco Seasoning
Tortilla Chips
Optional: tomatoes, lettuce, avocado, Honeyville Powdered Sour Cream, olives, cilantro

Directions:
Re-hydrate beans, chicken, onions, corn, peppers, and cheese according to package instructions.
Heat oven to 350 degrees
Heat oil in a large skillet, saute onions and garlic. Add chicken, red pepper, and taco seasoning and stir. Add beans, onions, corn, peppers, and salsa and mix thoroughly.
Line the bottom of a greased 9×13 baking dish with tortillas, add mixture on top and cover with cheese.
Bake for 20-25 mins, until cheese is melted.

Serve as is, or top with tomatoes, lettuce, avocado, Honeyville Powdered Sour Cream, olives, cilantro.

Enjoy! A perfect leftover dish as well!
