You know what I look forward to the most this time of year? Strawberries! Here in Southern California, Early spring is Strawberry season, and not matter where you go, you just can’t escape all the baked treats, smooth shakes, and delicious snacks, all including strawberries!
One thing my family enjoys the most would have to be Strawberry Doughnuts! We’ve got a little doughnut stand near our home that is known worldwide for this delicious, delectable treat. Stuffed full of fresh strawberry goodness, I never knew how amazing a doughnut could be! So it only makes sense that my love for this tried-and-true American dessert would push me towards creating my own in the Honeyville Kitchen. The difference between theirs and mine? Today’s doughnut is completely gluten free! That means you get all the taste and none of the guilt! It’s time for some Almond Flour Strawberry Doughnuts!
Preheat oven to 350 degrees.
In a large mixing bowl, sift together almond flour, salt, and baking soda.
Add eggs, butter, honey, and vanilla, and mix together until a soft batter forms.
Re-hydrate strawberries, then mix together with batter until completely combined.
Using a greased doughnut pan, pour batter into doughnut molds. You may need a butter knife to smooth out batter.
Bake at 350 degrees for 10-12 minutes, or until doughnuts are soft and spring back after you lightly push on them. Remove and allow to cool on a wire rack.
In a medium bowl, combine all frosting ingredients and mix with an electric hand mixer until a light frosting begins to form.
Frost doughnuts and serve.
These doughnuts are beyond delicious! The almond flour creates a light, fluffy, amazingly tasteful doughnut that you simply can’t find anywhere else. By far the best part of this doughnut is the strawberry frosting. Smooth, rich, and full of flavor, this doughnut is nothing without it’s creamy topping! Serve these for breakfast or as the perfect afternoon snack. You simply can’t go wrong with these round cakes of glory!
