Lime and desserts. What is it about these two combinations, especially during the summer months, that drive us crazy? Something about that distinct, lime taste, combined with the sweetness of a home-baked treat, that makes us nuts and leaves our stomach and taste buds craving more.

I knew that it was only a matter of time before we baked up a mouth-watering, lime-infused dessert. The bigger questions was what would that dessert be? What key ingredients would we use to make it? And, above all, how could we make it a recipe everyone could enjoy? The answer to all these questions was, of course, Almond Flour. Using our Blanched Almond Flour, along with a little help from our Raw Honey and Coconut Oil, we’ve created a gluten-free, grain-free snack that has all the sweet, delicious taste you’re hoping for, with just the perfect hint of lime flavor. Summertime never tasted so good! Get ready, it’s time to bake up some Almond Flour Lime Cookies!

Ingredients:
2 cups Honeyville Blanched Almond Flour
1/4 tsp Salt
1 tsp Baking Powder
1/3 cup Coconut Oil
1/4 cup Raw Honey
2 Tbsp Lime Juice

Lime Cream Cheese Frosting:
1/2 cup Butter, softened
8 oz Cream Cheese, softened
3 cups Powdered Sugar
2 Tbsp Lime Juice
1 tsp Vanilla

Directions:
Preheat oven to 350 degrees.

In a medium bowl, whisk together almond flour, salt, and baking powder.

In a separate bowl, combine coconut oil, honey, and lime juice, and mix until full incorporated. Add dry ingredient to wet ingredients and mix.

Once completely mixed, you should have a soft dough. Let rest in refrigerator for 30 minutes.

Once rested, remove and, on your USA Pan Cookie Sheet, lined with parchment paper, place balls of dough. Gently press down on dough to shape like a cookie.

Bake at 350 degrees for 10-12 minutes. Remove and let cool on a wire rack.

While cookies are cooling, make your frosting by combining butter, cream cheese, powdered sugar, lime juice, and vanilla, and beating together with an electric hand mixer until a soft frosting forms.

Gently frost the tops of cooled cookies, then serve.
