Hello Honeyville Fans! I’m Jenny, the founder of Good For You Gluten Free (www.goodforyouglutenfree.com), a blog dedicated to living the gluten free lifestyle. My world changed in April 2012 when I was diagnosed with Celiac. I was excited that the diagnosis meant I would finally feel normal again, but the drastic change in lifestyle was a difficult transition for me. I struggled with what to eat, chose the wrong foods (and gained weight), and couldn’t stop thinking and worrying about food.  Over the days, months and years I began to feel myself again. After a few years of trying to figure things outs, I decided it was time to start a blog, and share my experiences and favorite gluten free recipes and products with the world.

The Honeyville company invited me to submit a guest post to share one of my “recipes” with you. I use the word “recipe” in quotes because the beauty of cooking is you can add as much or as little seasonings as you want. You can cook something well done, or rare, etc.  You can get inspired by a “recipe” but a good home cook knows to add their own culinary flair to the process.

Today I’m sharing with you a quick dinner time recipe for Gluten-Free Almond Flour Crusted Tilapia Nuggets. While I’m not one to make New Year’s Resolutions, this year I’ve made a mental note to cook fish more often. My husband isn’t a big fish fan, so I only served it up for dinner on occasion. When I do, my kids go crazy. They love it!  I have been experimenting with various ways to make fish so my picky husband would enjoy it too.

Last night it struck me to substitute tilapia in my chicken nuggets recipe. Why not? I usually pan fry chicken lightly coated in rice flour. Tonight I would pan fry fresh tilapia lightly coated in almond flour. What a perfect way to kick off the New Year – not only with a healthy fish dish, but also one with nutrient rich almond flour. Plus, my family might just eat it because it looks like chicken nuggets – a favorite!

The secret ingredient in this “recipe” is the Blanched Almond Flour by Honeyville.  It has the perfect texture and I personally love that it’s certified gluten free, and has no chemicals, additives or fillers. By using the almond flour, I’ve been able to add more nutrition to my feast – more protein, fiber, calcium and iron.  As someone with Celiac, I need to find ways to add nutrients into my food. And of course, nutrient-rich food is so important for my growing children too.

I hope you enjoy this “recipe” as much as I did. The fish was flakey on the inside and the crust was golden and crisp. My kids loved it too. As for my picky husband, well, he ate it; but I still think he’s working on coming around to the idea of eating fish more often. We’ll keep trying!

Gluten-Free Almond Flour Crusted Tilapia Nuggets


Ingredients:
3-4 Tilapia Fillets (or any white fish) cut into strips or nuggets – fresh
1 1/2 cups of Honeyville Blanched Almond Flour
1 Egg or 1 cup Egg Substitute
1 Tbsp Garlic Powder
1 Tbsp Onion Powder or Onion Flakes (I used flakes)
1 tsp Kosher Salt
1/2 tsp Pepper
2-4 Tbsp Olive Oil or Butter

Directions:
1. In one bowl, scramble egg with 1 tablespoon of water to create an egg wash.
2. In a second bowl, combine flour with garlic powder, onion powder, salt and pepper. (Remember, use more or less of any recommended seasonings, or use other seasonings instead to give it the flavor you desire.)
3. Heat a large pan over medium high heat with 2 tablespoons of oil or butter
4. While the pan is heating, dip each tilapia nugget in egg wash, then roll in flour mixture until well coated.
5. Place flour-coated nugget, one at a time, in pan. Do not crowd (work in batches)
6. Cook on each side for about 2-3 minutes until lightly browned.
7. Remove nuggets from heat and place on a paper towel.
8. Serve over a bed of green beans or rice or whatever your heart desires!

Optional:  Squeeze lemon juice over fish for extra tangy flavor; serve with dipping sauce of choice (marinara, ketchup, lemon butter mix, get creative!)
