My mom used to always tell us that no matter how things are going, what struggles you are facing, or how sad you may feel, nothing brightens your day like a home baked cookie. Isn’t that true? No matter how bad everything is in life, warm, delicious cookies always seem to make everything a little better.

For many of us, that ultimate cookie that makes the sun shine brighter and the clouds of life blow away would be the chocolate chip cookie. It’s the staple of baking happiness around the world. Rich, flavorful, and with the perfect amount of homemade magic, nothing helps us feel better than a batch of these favorite desserts.

Today, we decided to take this traditional recipe and put just a few Honeyville twists on it. What might those be you ask? Well, for one thing, the entire cookie is gluten-free. If that wasn’t enough to get you excited, how about a little coconut! Yes, that’s right, coconut in chocolate chip cookies. Did that perk your interest? If so, then grab an apron, because it’s time to bake up some Almond Flour Coconut Chocolate Chip Cookies!

1 1/2 cups Honeyville Blanched Almond Flour
1/2 cup Shredded Coconut
1/2 cup Mini Chocolate Chips
1/4 tsp Baking Soda
1/4 tsp Salt
1/4 cup Pure Maple Syrup
2 Tbsp Coconut Oil, melted
1 Egg

Preheat oven to 350 degrees.


In a large bowl, combine almond flour, shredded coconut, chocolate chips, baking soda, and salt, and mix together until fully combined.


Next, add maple syrup, coconut oil, and egg. Mix until a sticky batter forms. Place batter in refrigerator and let set up for 30 minutes.

Remove, roll dough into tablespoon sized balls, then place on your USA Pan Cookie Sheet lined with parchment paper. Gentle press down cookie balls and shape them into cookies.

Bake at 350 degrees for 10-12 minutes, or until tops are golden brown.

Remove, allow to cool, then serve.
