Is there ever a bad time for a cookie? Think about it, no matter what diet you’re on, no matter what time of the year, or what major event is going on in your life, we always find a way to make room for a cookie! Why? Probably because cookies have a way of lifting us up, warming our souls, and helping everything in life seem that much better. Plus, they’re so dang tasty!

So how do we make a cookie just a little bit better for us? How do we remove the guilt that typically comes after said cookie has been enjoyed? Simply put, it’s all in the ingredients.

With a little help from our gluten-free, paleo friendly Blanched Almond Flour and the newest addition to our Honeyville family, our Organic Peanut Butter Powder, we’ve created a clean, delicious, mouth watering cookie that will melt your heart without all that sugar and guilt. It’s time for Almond Flour Chocolate Peanut Butter Cookies!

1 cup Honeyville Blanched Almond Flour
1/4 tsp Salt
1/4 tsp Baking Soda
2 Tbsp Pure Maple Syrup
1 1/2 Tbsp Coconut Oil, melted
2 tsp Milk
1 tsp Vanilla
1/2 cup Honeyville Organic Peanut Butter Powder + 1/4 cup water
1/2 cup Chocolate Chips

Preheat oven to 325 degrees.


In a medium bowl, whisk together almond flour, salt, and baking soda, and set aside.


In another bowl, combine maple syrup, coconut oil, milk, and vanilla.

Add dry ingredients to wet ingredients and mix until a soft, sticky batter forms.


Using two sheets of parchment paper, roll cookie dough out.


Take a cookie cutter or small ramekin and cut out cookie shapes.


Place on your USA Pan Cookie Sheet, lined with parchment paper, and bake at 325 degrees for 10 minutes. Remove and allow to cool.


Next, mix peanut butter powder and water to make peanut butter. You may need to add more or less water, depending on how thick your want your peanut butter.


Place a dollop of peanut butter on each cookie, and spread around.


In a small bowl in the microwave, melt your chocolate chips by heating in 20 second intervals. I added 1 tsp of Coconut Oil to this process, to help smooth out the chocolate and avoid burning.


Drizzle chocolate on top of cookies. All to cool, then serve.


These cookies are full of all the flavor we love in a cookie, without the load of so much sugar. the peanut butter and chocolate combination are perfect atop these gluten free, crisp cookies, and give you the perfect amount of sweetness! Bake these up for any special occasion and watch them fly right off the plate!
