Think about it. Whatever type of day your having, a delicious, fluffy chocolate doughnut always seems to turn your day completely around.

Imagine, if you will, having all the things you love about warm chocolate doughnuts, but without all the gluten. That’s right, I’m talking about a gluten-free, grain free chocolate doughnut that looks and tastes like the traditional doughnut you’d pick up at the local coffee shop. Sound too good to be true? Not when you use Honeyville Almond Flour!

With a little help from our Organic Coconut Oil and Raw Honey, and baked in our Norpro Nonstick Doughnut Pan, we’ve created the perfect chocolate doughnut to lift your spirits and get you through those workday blues. And, best of all, it’s Gluten-Free! Grab an apron, it’s time to bake up some Almond Flour Chocolate Coconut Doughnuts!

Ingredients:
3/4 cup Honeyville Blanched Almond Flour
1/4 cup Honeyville Baker’s Cocoa Powder (or Organic Cacao Powder)
1/4 tsp Baking Soda
Pinch of Salt
3 Eggs, separated
3 Tbsp Coconut Oil
3 Tbsp Raw Honey
1/4 tsp Vanilla

Glaze:
1/4 cup Coconut Oil
1/4 tsp Vanilla
1 1/2 Tbsp Water
1/2 Tbsp Raw Honey
Coconut Flakes (for topping)

Yields: 6 doughnuts

Directions:
Preheat oven to 350 degrees.

In a large mixing bowl, combine almond flour, cocoa powder, baking soda, and salt, and whisk together.

In a separate bowl combine egg yokes, melted coconut oil, honey, and vanilla, place egg whites in a separate bowl. Whisk together liquids (other than egg whites) and then add to dry ingredients and mix together until a thick batter forms.

Using an electric hand mixer, beat egg whites until they are light and fluffy. Add to batter and mix until completely combined.

Pour batter into greased Norpro Nonstick Doughnut Pan.

Bake at 350 degrees for 12-13 minutes. Remove from pan and allow to cool on a wire rack.

While doughnuts are cooling, mix all glaze ingredients, other than coconut flakes, in a large bowl using a hand mixer, then pour glaze over the top of your doughnuts. Sprinkle coconut flakes on top, and serve.

The coconut glaze topping is just enough to add a little bit of coconut flavor without overpowering the dish. The doughnut is light, fluffy, and the perfect amount of chocolate goodness.
