Ah, cookie bars. What is it about these delicious treats that we love so much? Sure, they’re warm, mouth-watering, square versions of our favorite cookies. But is that it? Isn’t there something that makes them more that just a cookie copy?
Today, we thought we’d put this thought to the test by baking up the ultimate cookie bar. Warm, gooey, and completely gluten-free, these bars give you everything you love in a traditional cookie, but are made entirely without traditional flour. Best off all, they call for our two most popular ingredients, our Blanched Almond Flour and Organic Peanut Butter Powder! Grab your apron, it’s time for Almond Flour Chocolate Chip Peanut Butter Bars!
Ingredients:
1/4 cup Applesauce
1 tsp Vanilla
1 1/2 tsp Baking Soda
Dash of Salt
2/3 cup Sugar
1/4 cup Chocolate Chips
Directions:
Preheat oven to 350 degrees.

Re-constitute your peanut butter powder by adding 1/2 cup of water and mixing until thick. Add applesauce and vanilla, and mix until smooth.

In a separate bowl, whisk together baking soda, salt, almond flour, sugar, and chocolate chips, until fully combined.

Add dry ingredients to wet ingredients and mix until a thin batter forms.

In your USA Pan Square Cake Pan, pour batter evenly.

Bake at 350 degrees for 15 minutes. Remove and allow to cool for at least 20 minutes before serving. NOTE: Cookies will solidify as they cool, so the longer you allow them to cool before serving, the better texture they’ll have.
