I love cereal! Whether at the breakfast table or as a late night snack, what’s not to love about this delicious, just-add-milk feast of kings! Okay, so I’m not sure if royalty actually feasts on cereal, but I’m willing to bet they’ve had themselves a bowl or two!

While my wife and daughter both prefer the sugar-laced, marshmallow stuffed cereals you see lining the local grocery aisles, I’ve always preferred the whole grain, healthier breakfast dishes. That’s what led me to this recipe for homemade whole grain corn flakes.

One of the main ingredients used in our recipe today is our own Honeyville Corn Bran. What is Corn Bran you ask? Corn Bran is an all natural derivative of corn, made from the tough, outer layer of whole kernel corn. Low in carbohydrates and calories, Corn Bran is high in dietary fiber, which helps promote gastrointestinal health. In simple terms, Corn Bran is a huge part of a healthy diet. In addition to our Corn Bran, this recipe also includes Milled Hard White Wheat (protein) and milled Flax seed (Omega-3), which makes this recipe a delicious, whole grain meal that you’ll actually love to eat! Plus, it’s super healthy for you! Alright, enough talk, let’s bake!

1 cup Honeyville Corn Bran
1 cup Milled Honeyville Hard White Wheat
2 Tbsp Milled Honeyville Flax Seed, or Honeyville Flax Seed Meal
2 Tbsp Brown Sugar
1/2 tsp Salt
1 Tbsp Vegetable Oil
3/4 cup Water

Preheat Oven to 300 degrees.

Mill Your hard white wheat. Remember, you need 1 cup milled hard white wheat, not 1 cup hard white wheat, so mill wheat into a separate bowl and measure out 1 cup.

Mill your flax seed separate, and measure out 2 tbsp.

Add all dry ingredients to your food processor, and pulse for a few seconds until completely combined. I used the Vitamix 750 for this recipe, which you can pick up at any of our local Honeyville locations.

Mix oil and water together in a measuring cup, and slowly pour in as processor is mixing. Carefully scrape down sides with a spatula to make sure ingredients are combining.

The key to this recipe is texture. You want your mixture to be wet, but not dough like. Think of moist sand, that’s the texture you’re looking for.

Once mixed, take a lightly greased cookie sheet and spread ingredients on that. Cover with parchment paper, then with a rolling pin roll out dough until it is very thin. Don’t worry if it doesn’t fill up the whole cookie sheet, just roll it out as thin as you can.

After you’ve rolled your dough, lightly spritz it will a water spray bottle, just so it’s moist and wet. Place it in the oven and bake at 300 degrees for 30-45 minutes.

Remove from the oven when the dough is cracked and dry.

Break pieces into flakes. You can make them as big or as small as you desire. Size does not matter here.

Once broken up, I placed the sheet back in the oven for an additional 10 minutes, just to give them a crispy taste and texture.

Remove, cool, and serve with milk.

This cereal is extremely delicious and healthy. Once splashed with milk, the flakes begin to take on the same texture and taste as grocery store cereal. The benefit here? Whole grains of course! Instead of having all those extra, questionable ingredients you have with store bought cereal, you have a whole grain masterpiece, packed with plenty of fiber, protein, and heart healthy Omega-3 acids.

This is far more healthy than anything at the local grocery store, and it tastes great too! Drop a few Honeyville Freeze Dried Fruits in there and you’ve got the perfect morning meal to start your day off right!
