First, mill your wheat.
Using your Komo Classic Mill, or a mill of your choice, mill your hard white and hard red into flour. This should give you just under 4 cups of flour.
Next, add the following ingredients to your BOSCH Universal Mixer, in this order: water, sugar, salt, milled wheat flour, yeast. Turn mixer to #2 setting and, while ingredients are mixing, slowly add alta artisan flour, 1 cup at a time, until dough begins to pull away from the sides. knead in machine for 3-4 minutes.
Remove dough from machine and place in a greased bowl.
Cover, and allow to rise until double in size. About 30-40 minutes.
Deflate dough, remove from bowl, and divide in half.
Preheat oven to 450 degrees.
Shape each half into a loaf.
Place on your USA Pan Italian Loaf Pan and let rise for 30 minutes. Once risen, slice tops with a knife, then spray evenly with water.
Place in 450 degree oven and bake for 25 minutes. Remove and allow to cool before slicing and serving.
These loaves are everything you love in Italian bread. Thanks to the USA Pan Italian Loaf Pan, the outsides bake up evenly crisp, while the insides remain light and fluffy.
