What’s your dream summer salad? You know, that perfectly delicious blend of summertime flavors that makes your mouth water and your knees weaken. What would be included in this amazing dish and, as with all salads, what health benefits could it give you?
For me, summertime salads are all about the whole grains. Whether it’s flavorful Rye, delicious Soft White Wheat, or even some ancient Kamut, there’s really no salad that gives more of that summertime feel than a salad made completely out of whole grains. And when it comes to creating the perfect whole grain salad, there’s no better tool than the Fagor 3 in 1 Pressure Cooker.
This bad boy is awesome! Not only can it pressure cook, rice cook, and slow cook just about any meal you can think of, it makes cooking whole grains the easiest task in the world. In literally 7 minutes you can cook up any whole grain you can imagine without losing its flavor, texture, or healthy whole grain goodness!
It’s this love of salads, whole grains, and pressure cooking, that led us to today’s recipe. Using our amazing Organic Quinoa, with the help of our Fagor Pressure Cooker and Freeze Dried Peas, we’ve created the perfect summer salad the whole family can enjoy. Ingredients:
1 cup Honeyville Organic Quinoa
2 1/2 cups Honeyville Freeze Dried Peas
1/2 cup Feta Cheese
1/4 cup Honeyville Bacon Flavored TVP
1/2 cup Chopped Basil
1/2 cup Chopped Cilantro
1/2 cup Sliced Almonds
Dressing:
1/3 cup Lemon Juice
1/3 cup Olive Oil
1/4 tsp Salt
3 Tbsp Raw Honey
Directions:
First, cook your quinoa.
To do so, place quinoa and 2 1/2 cups water in your Fagor Pressure Cooker. Cook at “High Pressure” for 7 minutes. Once down cooking, release steam, remove pot from pressure cooker and place in refrigerator for 30 minutes for quinoa to cool.
While quinoa is cooking, re-hydrate your peas by bringing 3 cups water to a boil, turning off heat, then adding peas. Stir until peas are soft, but not mushy. Drain excess liquid.
Remove quinoa from refrigerator and, in a large bowl, toss together quinoa, peas, feta cheese, bacon tvp, basil, cilantro, and almonds, until completely mixed together.
In a small bowl, combine lemon juice, olive oil, salt, and honey, and whisk together until completely combined. Drizzle dressing over the top of the salad and toss together until fully combined, then serve.
