September is here, and that can mean only one thing. It’s Autumn time! I love everything about autumn. The cool weather, the crisp leaves, and the sweet smell of fresh baked treats filling the air. Really, there’s no better time of the year, especially for baking!
Part of the joy of the autumn months is the harvest of some of our favorite fruits and veggies, including apples. For me, these fall months are all about enjoying cool days with my family up in the local apple orchards of Southern California. It’s that love of apples that led me to this delicious recipe.
Apple Sharlotka, also known as Russian Apple Cake, is a traditional fall cake recipe originally developed in, well, Russia. The combination of delicious apples, fine sugar, and baked together in a Springform Pan, gives you a soft, sponge-like cake that is sure to be a hit in your home this fall. Best of all, you can easily translate the recipe to include your Ova Easy Egg Crystals and get the same result. Just remember, 2 Tbsp of Egg Crystals to 3 Tbsp of water equals one egg. Enough talk though, let’s get to baking some delicious Russian Apple Cake!
Ingredients:
6 Eggs
1 cup Sugar
1 1/3 cup Honeyville Alta Artisan Flour
Pinch of Baking Powder
2 cups Honeyville Freeze Dried Apples
Directions:
Preheat oven to 340 degrees.
In a large bowl, combine eggs and sugar, and beat with an electric mixer until incorporated.
In a separate bowl, whisk together flour and baking powder.
Also, re-hydrate your apples by soaking in water until soft, then draining any excess liquid.
Prepare your USA Pan Springform Pan by coating with butter.
Add flour to egg mixture and whisk together until a thin batter forms. Gently fold in apples.
Pour batter into prepared pan.
Bake at 340 degrees for 60 minutes. Remove when the top is golden brown, and let cool in pan for 15 minutes.
Once cooled, remove side of pan and place cake on a plate. Dust top with powdered sugar, then slice and serve.
