But besides the filling and various toppings, what really separates a cheesecake from any traditional cake or pie has to be the crust! If the crust isn’t absolutely, mouth-watering amazing, then chances are the cheesecake won’t be either. Your crust can make or break your cheesecake. Like everything else, it all comes down to the key ingredients.

Not only would it be extremely healthy for you, it would also be the perfect accent to this tried-and-true, cream cheese creation! Ladies and Gentlemen, you can! Using our organic quinoa, we’re created the perfect, bite-sized cheesecake dish for you, with a crust that you’ll die for! Get ready, it’s time to whip up some Quinoa Cheesecake Bites!
Ingredients:
1/2 cup Honeyville Organic Quinoa
1/2 cup Walnuts
5 Dates, pitted
2 Tbsp Raw Honey
Filling:
4 oz Cream Cheese
1 cup Greek Yogurt
1/2 cup Sugar
2 tsp Lemon Juice
1 tsp Vanilla
Yields: 12 bites
Directions:
First, cook your quinoa. Place quinoa in your Fagor Pressure Cooker with 2 cups water and cook at “High Pressure” for 8 minutes. Release pressure, drain excess water, and set quinoa aside. You should have 1 cup of cooked quinoa.
Next, place quinoa, walnuts, dates, and honey in your BOSCH Food Processor Attachment.
Process ingredients until a soft, sticky dough forms.
Place 1 Tbsp dough in each cup of your USA Pan 12-cup Muffin Pan and form into a cup.
Preheat oven to 350 degrees.
In a medium bowl, add your cream cheese, Greek yogurt, sugar, lemon juice, and vanilla.
Mix together with an electric hand mixer until a smooth filling forms.
Using a spoon, drop a dollop of filling in each cup.
Bake in the oven at 350 degrees for 25 minutes. Remove and place in refrigerator for 1 hour to allow bites to cool and set up. You can then drizzle melted chocolate, or any other topping, over the bites, and serve.
These bites bake up with the perfect cheesecake taste and texture. Their bite-sized shape and form give you the perfect dessert or snack, without over-indulging.
