Fall and pie. Is there anything that goes better together? Why is it that when we think about autumn, we immediately think of changing leaves, trick-or-treating, cooler weather, and, of course, fresh baked pie? It’s like it has been instilled into our souls. Like that burn you get in your mouth from that first sip of Hot Cocoa, pie just always stays on your mind throughout fall time.

And the king of all autumn time pies would, of course, have to be apple. This is the season for picking apples, and the crisp taste of baked apples, smothered in brown sugar and cinnamon and baked up all warm and delicious in a flaky pie crust just screams sweater weather! So what if you were able to take all the things you love about fresh-baked apple pie, and shrink it down to the perfect, personal-sized dessert the whole family would love? Who wouldn’t want that, right? Grab the souffle bowls and warm up the oven because it’s Mini Apple Pies time!
Ingredients (Crust):
1/2 tsp Salt
1 cup (2 sticks) Butter, Chilled & Diced
1/2 cup Ice Water
(Filling):
3/4 cups Brown Sugar
Yields: 4 personal pies
Directions:
Preheat oven to 375 degrees.

In a large bowl, combine flour, salt, and diced butter.

Add water and mix until a soft dough forms. Form dough into a ball and place on the counter.

In a separate bowl, add re-hydrated apples, brown sugar, flour, and wise woman of the east spice. Mix until apples are fully coated.

Roll out dough on a lightly floured surface.

Lightly spray your souffle bowls with cooking spray.

Place a souffle bowl over the top of the dough and cut a square around the bowl. Make the square just large enough to fit around the bowl.

Place the cut out dough in the bowl and shape it evenly around the bowl.

Spoon in the apple filling. You’ll want the filling just peeking over the top of the bowl.

Cut another similar square in the dough, then cut 6 individual strips of dough.

Place three strips across the top of the bowl, then begin to weave the other three pieces between the dough.

Don’t worry, once you get the technique down, it’s actually really easy and fun!

Cut of the overhanging pieces of dough, and push down the ends on to the bowl.

Repeat this step for each bowl, then place the completed pies on to a baking sheet.

Whisk 1 egg in a small bowl for the topping.

With a brush, lightly coat the tops of the pies with the egg wash. This will help give your pies a golden brown look when they bake up.

Bake in the oven at 375 degrees for 45-60 minutes.

Remove, and let cool for about an hour.
Serve in the bowl, or slice it into 4 individual pieces.

These pies may be small, but don’t let that fool you. The sweet taste of baked apples covered in brown sugar and spices will melt in your mouth and weaken your knees! The crust bakes up light and flaky, with a delicious buttery taste that can’t be beat!
