I need a tropical getaway, how about you? I don’t know why, but it seems like every year around this time I really get the urge to trade in the parka’s and plows for palm trees and paradise!
It’s probably this desire for warm sands and beach chairs that led me to this awesome recipe for Key Lime Bread. Just the sight of lime shavings started to warm my soul and melt away the January snow! Being the Honeyville fan that I am, the first thought that came to my mind, of course, was this: How can I put a Honeyville twist on this Tropical recipe? The answer? Make it Gluten-Free! Thanks to our Grandpa’s Kitchen Gluten Free Bread and Pizza Mix, that was easy as pie (Key Lime pie, I might add). So grab the Beach Umbrella’s and flip flops, it’s time to get tropical with our Gluten-Free Key Lime Bread!
Ingredients:
1 pack Grandpa’s Kitchen Gluten Free Bread & Pizza Mix
1 tsp Salt
3 tsp Sugar
2 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 1/2 cups Greek Yogurt
2 Eggs
1/2 cup Coconut Oil
3-4 tsp Lime Zest
1 cup Chocolate Chips
Directions:
Preheat oven to 350 degrees.
In a large bowl, combine yogurt and yeast (yeast packet in mix) and let sit for 5 minutes. Add eggs and coconut oil to yogurt and mix together until fully combined.
In a separate bowl, combine bread mix, salt, sugar, baking powder, and baking soda, and mix until fully combined.
Zest 1 large lime to get about 3-4 tsp of Lime zest.
Combine wet and dry ingredients and mix together until a soft, sticky dough forms. Add lime zest and chocolate chips and mix together until fully combined.
Pour dough into a regular bread pan and place in oven. Bake at 350 degrees for 40-45 minutes, covering it lightly with foil about half way through (to avoid burning the top).
Remove from oven and pan immediately and allow to cool on a cooling rack.
This is the tropical getaway you’ve been waiting for! This bread bakes up super soft and spongy, thanks to the yogurt, but is packed full of tropical taste! The lime, combined with the hint of coconut from the oil, gives this bread an island feel you can’t beat. The chocolate chips bring in that taste your sweet tooth has been craving and is the perfect companion for the lime. And the whole thing is Gluten-Free! Can you believe it?!
