Think about it, how many disasters have been relieved, struggles been solved, and problems been averted, all from a sweet, 5-10 minute chocolate break.

So imagine, if you will, enjoying a sweet, delicious chocolate treat that is rich in flavor, looks amazing, and is completely flourless. That’s right, no flour! Let your gluten-free heart dance with joy, because we have found such a treat!

Baked up with our quick rolled oats, and a little help from our amazing organic cacao powder, we’ve created the perfect, chocolate flavored muffin that is sure to get your tongue smacking, your stomach dancing, and your taste buds shivering with delight! And best of all, it’s completely gluten-free! Grab your favorite cupcake tray, it’s time to bake up some Flourless Chocolate Oat Muffins!

Ingredients:
1 3/4 cup Honeyville Quick Oats
3 Egg Whites
3/4 cup Organic Cacao Powder (or you could substitute Baker’s Cocoa instead)
1/2 cup Applesauce
1 1/2 tsp Vanilla
1/2 cup Greek Yogurt
1/2 tsp Cream of Tartar
1 1/2 tsp Baking Powder
1 1/2 tsp Baking Soda
1/4 tsp Himalayan Salt
1 cup Hot Water
3/4 cup Coconut Sugar (or regular Sugar if you prefer)
1/4 cup Dark Chocolate Chips

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine oats, egg whites, cacao powder, applesauce, vanilla, greek yogurt, cream of tarter, baking powder, baking soda, salt, water, and coconut sugar, and blend together with an electric hand mixer until a thick batter forms.

In your USA Pan Muffin Pan, lined with muffin cups, pour batter evenly into each cup.

Place a few dark chocolate chips in the center of each muffin.

Bake at 350 degrees for 12 minutes, or until muffins are springy when touched. Remove and let cool in pan for 5 minutes before placing on a cooling rack.
