My sisters and I agree that my mom is the queen of putting together sides with a meal. However, this gene was not passed down to me. That is why I love a casserole! The protein and the veggies and, in this case, bread in one dish I don’t feel like I’ve got to add other players to the plate. I’ve got to credit my little sister for the idea for this recipe–thanks Ace!
Ingredients:
Chili:
1 cup Honeyville Flavored-like Chili TVP
1 cup Honeyville Quick Cook Red Beans
1 cup Honeyville Quick Cook Black Beans
1 cup Honeyville Freeze Dried Bell Peppers
1 cup Honeyville Freeze Dried Corn
1/4 cup Honeyville Dehydrated Onions
1 (14.5 oz) can Diced Tomatoes (undrained)
5 cups Water
1/4 tsp. Garlic Powder
1-2 Tbsp. Chili Powder
3 Tbsp. Ketchup
Salt and Pepper to taste
Corn Bread Topping:
1 box Honeyville Corn Bread and Muffin Mix
2 Tbsp. Honeyville Powdered Whole Eggs
1 and 1/4 cups prepared Honeyville Milk Alternative

Directions:
Begin making the chili by boiling water. Add the rest of the chili ingredients. I only used 1 Tbsp of chili powder but add more or less depending on your taste preference. Let the chili simmer over medium heat for 10 minutes. Stir frequently. Pour chili into a 9×13 pan.
In a bowl mix together the corn bread muffin mix, egg powder and milk. Stir until the mix is moistened. Batter may be lumpy. (Quick side note, I like to break up any large muffin mix clumps first before adding the liquid.) Pour batter over the chili.
Bake in a preheated oven at 375 degrees for 35 minutes until corn bread is golden brown and passes the toothpick test (insert a toothpick into the center and if it comes out clean it’s done). Once out of the oven brush honey over the top. Let set 5 minutes before serving.
I like to sprinkle a bit of Honeyville Freeze Dried Cheddar Cheese over the top and a dollop of sour cream. Yep I can add cheese to most meals and since being married we add sour cream to alot of things too! That is what marriage is all about right–combining two family eating habits and making a new one!
We really like this meal. It was filling and yummy and easy to prepare. I love the hint of sweet you get with the brushed honey on top. That step is a must in my book. If you are nervous about trying TVP (which you shouldn’t be–it is GREAT! I love the TVP sausage) you could use Honeyville Freeze Dried Ground Beef and then adjust seasonings and water.
