Grab a whisk, it’s time to create blueberry popovers!
Yields: 12 popovers
Preheat oven to 375 degrees.
In your USA Pan 12-cup Muffin Pan place 1 slice of butter in each cup. Place pan in oven for 5 minutes, or just until the butter melts. Remove and set aside.
Soak freeze dried blueberries in a large bowl with water until completely re-hydrated, then drain any excess liquid.
In a large bowl, beat together milk, eggs, sugar, and vanilla. Add flour and whisk together.
In a small bowl, whisk together sugar and cinnamon for topping.
Pour 1/2 cup batter in each muffin cup. Divide blueberries up evenly and place in each cup. Sprinkle cinnamon/sugar mixture over the top of each cup.
Place in 375 degree oven and bake for 5 minutes, then turn temperature down to 350 and bake for an additional 25 minutes. Remove from oven and allow to cool and deflate in pan before removing. Dust lightly with Powdered Sugar before serving.
These popovers bake up light and fluffy on the inside, with the perfect crispness on the outside to hold everything together. Each popover is packed full of flavor, texture, and aroma! Serve these up for a delicious breakfast alternative, or enjoy them as a delicious after-school or after-work snack. Either way, you won’t walk away disappointed!
You can’t go wrong with our Freeze Dried Blueberries, and this popover recipe is the perfect recipe to prove that.
