Though there have been many articles, studies, and results over that past few years showing the health benefits associated with this seed, still many people are unfamiliar with everything this simple ingredient can provide.

Said to be one of the most powerful plant foods on the planet, flax seed has been shown to offer numerous health benefits, including reducing the risk of heart disease, cancer, stork, and diabetes. Pretty amazing when you think of how tiny one flax seed is.

With all these benefits in mind, we set out to create the ideal, perfect recipe using our impressive flax seeds. What we came up with was a muffin that will satisfy your appetite and heart as well! Grab some measuring cups, it’s time to bake up Banana Oat Flax Muffins!

Ingredients:
1 1/4 cups Honeyville Regular Rolled Oats
1/2 cup Greek Yogurt
1/2 cup Milk
1/2 cup Honeyville Hard White Wheat, Milled (1 cup of flour)
1/4 cup Honeyville Baker’s Cocoa Powder
1/4 cup Honeyville Flax Seed, ground (or 1/2 cup Honeyville Flax Seed Meal)
2 tsp Baking Powder
1 tsp Baking Soda
1/2 Tbsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Ground Cloves
2 cups Honeyville Freeze Dried Bananas
1/3 cup Coconut Oil
2 Tbsp Honeyville Ova Easy Eggs + 3 Tbsp Water (or 1 Egg)
1/2 cup Chopped Walnuts

Directions:
Preheat oven to 400 degrees.

In a large bowl, mix together oats, yogurt, and milk, and let sit for 10 minutes.

In a medium bowl, whisk together milled wheat, cocoa powder, ground flax seed, baking powder, baking soda, cinnamon, nutmeg, and cloves.

In another bowl, re-hydrate bananas by soaking in water until soft, then draining any excess liquid. Once re-hydrated, mash bananas, add coconut oil and ova easy eggs and mix together.

Add dry ingredients and banana mixture to oats and stir together until a very thick dough forms. Once dough is formed, fold in walnuts.

In your USA Pan Muffin Pan, lined with muffin baking cups, drop scoops of dough into each cup.

Bake at 400 degrees for 18-20 minutes. Remove and allow to cool for 2 minutes in the pan before enjoying.
